Tom Brown at The Capital Earns Coveted Michelin Star: A Landmark Moment for Culinary Excellence

Warwick Hotels & Resorts is proud to celebrate an extraordinary milestone in London’s culinary scene: Chef Tom Brown has been awarded a Michelin star for his Knightsbridge restaurant, Tom Brown at The Capital, in the 2026 Michelin Guide. This remarkable achievement highlights not only the exceptional talent of Chef Brown and his team, but also the enduring reputation of The Capital Hotel as a home for world class gastronomy.

A Return to Where It All Began

For Chef Tom Brown, this accomplishment is far more than an accolade, as it represents a meaningful return to the place where his career first took flight. Tom originally rose to prominence as Head Chef at Outlaw’s at The Capital, where his leadership now contributed to the restaurant earning its Michelin star.

After launching his acclaimed Hackney Wick restaurant Cornerstone in 2018 (also Michelin‑starred), Brown continued to build his name as one of the UK’s leading chefs. To now earn a Michelin star less than a year after opening Tom Brown at The Capital in April 2025 is a poetic full‑circle moment, acknowledging both his past and the evolution of his craft.

A Restaurant Rooted in Craft, Creativity, and Sustainability

Tom Brown at The Capital is an intimate 28‑cover dining room that showcases the chef’s signature approach to modern British seafood. His cooking balances classical techniques with bold, flavour‑forward compositions, always anchored in the highest‑quality, responsibly sourced ingredients. Sustainability is core to the restaurant’s ethos, and Brown works closely with trusted fishermen and producers, ensuring that every part of the fish is used thoughtfully and waste is minimised.

This commitment to sustainability, creativity, and excellence is reflected across the menu, from refined seafood dishes to carefully developed meat and vegetarian options that round out the dining experience.

Chef Tom Brown’s First Impressions

Upon receiving news of the Michelin star, Chef Tom Brown expressed profound gratitude and pride.

“Winning a Michelin star for Tom Brown at The Capital means a great deal to me,” he shared. This restaurant represents everything I care about as a chef; incredible produce, sustainability, and food that’s precise but generous. To receive this recognition so soon after opening is incredibly rewarding for the whole team.” He added that Michelin particularly enjoyed the turbot dish, which said is one of his personal favourites, making the honour more meaningful.

A New Chapter for The Capital Hotel

This success contributes to a new era for The Capital Hotel, which underwent a wider refurbishment ahead of the restaurant’s opening. Just steps from Harrods, Sloane Street, and London’s cultural icons, the hotel continues to strengthen its reputation as one of the city’s most distinctive boutique properties, known for authentic British hospitality and refined experiences.

Celebrating a Milestone in the Warwick Collection

Warwick Hotels & Resorts proudly congratulates Chef Tom Brown and his exceptional team for this landmark achievement. As a brand defined by heritage, craftsmanship, and personalised experiences, it is an honour to showcase a restaurant that aligns so deeply with these values.

With this Michelin star, Tom Brown at The Capital cements its place as one of London’s most exciting dining destinations and a shining example of culinary excellence within the Warwick family.
