We are therefore extremely pleased to announce the return of Head Chef Tom Brown; a culinary master in his own right. What can visitors expect when dining, and how will our selection of signature dishes perfectly complement the guest journey at Warwick?
A Michelin-Starred Talent Joins Warwick
Tom Brown is certainly no stranger to The Capital. His first job in London was in this kitchen, working under Nathan Outlaw, and it left a lasting impression. Now returning as Head Chef, with a Michelin star to his name and a clear vision for the future, Tom brings both passion and purpose to this next chapter. As he puts it: “To come back and have my name above the door feel very special. There have been some unbelievable chefs, so I just wanted to create something magical here and be part of that history”
Our Michelin-recognised chef previously worked in various high-quality establishments, including the Cornerstone in Hackney, the St. Enodoc Hotel in Rock, and Rick Stein restaurants. He later earned his first Michelin star.
Our new chef is indeed a man of many talents, as he has also taken on an entrepreneurial role when opening The Pearly Queen in November 2023; an oyster bar in Shoreditch that has since received rave reviews from customers. When we highlight his flair for novelty alongside the use of fresh seafood ingredients, it becomes clear why Tom Brown has established a name for himself throughout the culinary community
A Culinary Experience Rooted in London
The Capital has come to embrace the very same eclectic nature that defines modern London. Sophistication, an open atmosphere, and locally sourced ingredients all serve to mirror the appeal of contemporary British cuisine. As Tom mentioned on his latest interview with us, - “we just want to do things that taste delicious with as little pretentiousness as possible. We do not mess around with lots of little frilly bits that we do not need. It is all about simple, honest, but perfect execution.”

Although The Capital aims to become nothing less than the best fish restaurant in the country, the down-to-earth nature of this creates a warm and welcoming atmosphere.
Similar to the dishes being served, the ambience of The Capital features a unique blend of tastes, colours, and texture. High ceilings, plenty of natural light, and soft pastel overtones will please the eyes as much as the palate. Once again, the intention here is to offer both guests and locals with Michelin-starred atmosphere.
What to Expect on the Menu
Even the most demanding tastes will be easily satisfied when dining at The Capital. Head Chef Tom Brown places particular emphasis on seafood and produce-driven ingredients, as the Chef himself commented – “the remit is to be the best fish restaurant in the country, if not even higher than that” - Below a sample of what to expect throughout the menu
be delighted by a five-course lunch menu with:
- Oysters, seaweed, and toast
- Crab custard
- Asparagus in lobster sauce
- English strawberries and cheesecake for dessert
Things certainly begin to heat up when the sun dips below the horizon, and the array of nine-course dinner possibilities is equally diverse, including the following:
- Scallop with blood orange and rhubarb
- Mussels with apple and kohlrabi
- Cuttlefish in the "cacio e pepe" style (one of Tom’s favourites)
- Crab custard with tomato and horseradish
These meals can be paired with a kaleidoscope of drink options. From signature cocktails such as the Big Bang found at The Capital Bar to a glass of Chapel Down Brut chilled to perfection, there are many unique possibilities to explore.
