Welcoming the New Chef to Hotel Westminster, Paris: A New Culinary Chapter Begins
Paris's Hôtel Westminster has a rich history of hospitality and a well-deserved reputation for gastronomy. Our new chef’s arrival in the French capital begins a new chapter in the hotel's story as a world-class dining establishment. Discover more about him, the hotel's vision for culinary excellence and what sets our restaurants apart as fine dining destinations.
Introducing Chef Grégory Gbiorczyk
Chef Gbiorczyk trained at the École Hôtelière d’Avignon, initially specialising in pastry and earning fourth place in the National Pastry Competition in 1998. He rose rapidly through the ranks of French gastronomy, notably serving as Head Chef at the Michelin-starred Le Violon d’Ingres, before putting his culinary stamp on some of the most prestigious kitchens in the country, such as the Cercle de l’Union Interalliée and the Hôtel Molitor Paris.
With such an impressive career behind him, Grégory now brings a modern vision of French cuisine to Hotel Westminster, something that aligns perfectly with the hotel's wider outlook of excellence in modern hospitality.
Hotel Westminster's New Culinary Vision
Gbiorczyk's signature style blends elegance, seasonality, and a refined focus on flavor combinations. At Le Céladon, our highly regarded hotel restaurant, respect for ingredients has always been at the heart of its culinary identity. Following its recent renovation, the restaurant now reflects that philosophy more than ever, offering a setting that is as refined and contemporary as its cuisine. The new chef’s ambition to promote a modern French culinary approach perfectly complements this respect for tradition as a new chapter begins.
With a thoughtful appreciation for what has come before, new dishes will feature on the menu, providing an updated dining experience that honors the best of traditional French gastronomy while introducing exciting innovation. Additionally, the revitalization of Le Céladon has redefined the overall dining experience, strengthening the connection between cuisine, atmosphere, and guest comfort. Gastronomy will continue to be guided by seasonal ingredients while remaining attentive to individual dietary needs and potential intolerances.
These are the key concepts that Gbiorczyk is using to make our two restaurants, Le Céladon and Le Petit Céladon, stand out for their renewed culinary flair and refined creativity.
